Zesty Yogurt Chicken + Roasted Zucchini

Serves 4
Ingredients
Zesty Yogurt Chicken
• 2 lbs chicken breasts
• 1 tbsp olive oil
• 1/3 cup Greek yogurt
• Juice from 1 lemon
• 1/2 tsp onion powder
• 1/2 tsp garlic powder
• 1/2 tsp paprika
• Kosher salt & pepper
• 1-2 tsp hot sauce optional
• Parsley to garnish, optional
Roasted Zucchini
• 2 zucchini
• 1/2 tsp chili powder
• 1/2 tsp garlic powder
• 1/2 tsp salt & pepper
• Grated Parmesan to top optional
Instructions
- Preheat oven to 400 degrees. Spray a baking sheet with Pam olive or avocado oil.
- If you have thick chicken breasts, cut them longways into thinner pieces. This makes them cook quicker and more evenly.
- Toss your chicken in the ingredients listed above. Cut your zucchini into rounds and season. Arrange the chicken and zucchini on your sheet pan.
- Bake for 20-25 minutes or until chicken is cooked through. Top zucchini with parmesan and chicken with parsley.
