Zesty Yogurt Chicken + Roasted Zucchini

Serves 4

Ingredients

Zesty Yogurt Chicken
• 2 lbs chicken breasts
• 1 tbsp olive oil
• 1/3 cup Greek yogurt
• Juice from 1 lemon
• 1/2 tsp onion powder
• 1/2 tsp garlic powder
• 1/2 tsp paprika
• Kosher salt & pepper
• 1-2 tsp hot sauce optional
• Parsley to garnish, optional

Roasted Zucchini
• 2 zucchini
• 1/2 tsp chili powder
• 1/2 tsp garlic powder
• 1/2 tsp salt & pepper
• Grated Parmesan to top optional

Instructions

  1. Preheat oven to 400 degrees. Spray a baking sheet with Pam olive or avocado oil.
  2. If you have thick chicken breasts, cut them longways into thinner pieces. This makes them cook quicker and more evenly.
  3. Toss your chicken in the ingredients listed above. Cut your zucchini into rounds and season. Arrange the chicken and zucchini on your sheet pan.
  4. Bake for 20-25 minutes or until chicken is cooked through. Top zucchini with parmesan and chicken with parsley.
