Recipe of the Week: Bell Pepper and Spinach Frittata
4 large eggs
½ cup skim milk (or any unsweetened nut milk)
½ cup chopped spinach
1/3 cup bell pepper (any color)
¼ cup reduced fat fete cheese
Salt and pepper to taste
Pam olive oil spray
In a medium bowl. Whisk together eggs and milk. Heat Pam in an oven safe pan over medium-low heat. Add Spinach, pepper, salt and pepper. Sauté until the pepper is tender, about 10 minutes. Pour the egg mixture into the pan and sprinkle the feta cheese on top. Continue to cook, pushing the eggs occasionally to make sure all the egg cooks evenly. Remove from the heat.
Place the pan into the oven and broil on high until the top is lightly browned, about 4 minutes. Enjoy!
