Recipe of the Week: Grilled Shrimp
1 lb Shrimp
1 Chipotle chili in adobo, chopped
2 tsp adobo sauce
2 Limes, juice and zest
2 Cloves garlic, chopped
1 tsp Cumin, toasted and ground
Salt and pepper to taste
1. Mix all ingredients except the shrimp.
2. Marinate the shrimp in the mixture for at least 20 minutes.
3. Skewer the shrimp and grill over medium high heat until cooked, about 1-3 minutes per side.
4. Serve with a large green salad or plate of grilled veggies of your choice to make a meal!
