Recipe of the Week: Chili Lime Rainbow Skewers

Chili Lime Rainbow Skewers
Makes 10 skewers Serving size 2 skewers

Ingredients

Marinade
½ cup Lime Juice
¼ cup Olive Oil
1 tsp chili powder
1 tsp salt
1 tsp pepper
½ tsp sugar sub

Skewers
10 Wooden skewer
3 lbs chicken breast
2 Red bell peppers cut into 1 inch pieces
2 Yellow bell peppers cut into 1 inch pieces
2 Orange bell peppers cut into 1 inch pieces
2 Green bell peppers cut into 1 inch pieces
1 Red onion cut into 1 inch pieces
Fresh cilantro for garnish

Directions
Soak wooden skewers in water for 5-10 minutes and set aside. In a large bowl combine the chicken with the marinade ingredients and mix. Cover with plastic wrap and marinate in the fridge for at least an hour. If baking, preheat oven to 400 degrees F. Assemble skewers by adding peppers: red, orange, yellow, green and red onion. Follow with the marinated chicken. Repeat until skewer is full. Place skewers on baking sheet and brush with remaining marinade. Bake or grill 20-30 minutes, until chicken is not longer pink. Garnish with fresh cilantro and enjoy!
